Okra and Tomato Stew:     equal parts okra and tomatoes     1 clove garlic     2 tb butter     1 tb vegetable oil     1 cup chopped onions     salt and pepper to taste Cut okra into 1/2 inch pieces, chop tomatoes. Mince garlic. Heat butter and oil in saute pan. Stir in the okra and onions, saute for about 10 minutes. Add the garlic and tomatoes; saute for 3-4 minutes. Reduce heat and simmer for 10-15 minutes or until okra is soft. |
