Hello! Reminders: We are taking next week off, vacation time! Since Wed. is the fourth of July, the Wed. Carrboro market has been switched to Tuesday the 3rd, so if you are planning on doing shopping, keep that in mind. We will add the week that we miss to the end of the shares, thus the last CSA delivery is planned for September 5th, 2007 this year. POTATO HARVEST with the family! Come on out with your family or friends to help harvest potatoes, much fun playing in the dirt! Great for kids! We are going to hold our annual potato harvest on Sunday July 8th from 1pm to 4pm. You can come late or leave early, what ever suits you or your child's nap time ;-) RSVP's are necessary for this event, since we are not going to hold it if we only have one or two people coming out. SO... let me know as soon as you know. I will keep sending out reminders and eventually directions. The work is fairly low key, I plow up the potatoes with the tractor then what you will do is sift through the plants and loose soil finding the potatoes and piling them up. It is kind of like searching for gold, but it is in soil not water and it is potatoes not gold!
A few other reminders: Please remember to return your share box each week, it is helpful as we are always running short and have to use paper bags to supplement sometimes. The paper bags are fine with us, the only problem with them is that they don't stack in the delivery van like the boxes do so they take up more room. So, return boxes, bags, rubber bands, what ever and we will reuse them!!!! Also, please remember to use your credits, if you have told me to hold a box for you this year, it is up to you to let me know when you would like to use you double portion. You can let me know at anytime, plan ahead. There are 8 weeks of deliveries left in the season after this week! Also, remember that you must pick up your shares within the designated pick up times or FORFEIT them for the week. This is up to you to manage your time appropriately, either let me know in advance to hold your box, or pick it up within the designated pick up times or forfeit your box. With so many members, it is crucial that we stick to this plan for smooth confusing free Wednesdays. Pick up times are as follows, on farm is anytime, Carrboro market is 3:30 till 6:30, Durham is 2:30 until 7:00, Hillsborough is 2pm until 7:00 and Chapel Hill is 2:30 until 7:00. NO LATER. Well, this week we are taking off marks a lot of transitions in the produce on the farm. When the shares resume in two weeks, there will be some different things in your boxes, and we are saying goodbye to many things this week. New, you will see green peppers, eggplant, and yes, finally TOMATOES!!!! We are saying goodbye this week to kale, chard, cabbage, broccoli, cauliflower, beets, carrots, most all of the greens and spring crops in general. They just can't handle the heat and it is there natural time to go. We will have more potatoes, summer squash and cucumbers, onions, leeks and garlic all summer. We will also see some canteloupe soon as well as some winter squash. If we are lucky we will have more basil and green beans..hope we are lucky.
So I know we have given you a lot of cucumbers this week, we would not have done so if we were not taking a week off next week. They will hold, and you can eat cucumber salad for the 4th of July. I hope you can utilize them, we have had a cucumber explosion here, and if anyone wants a lot more, you can let me know and you can pick some up from me at the Saturday market this Saturday. You can pickle them and can them for the winter, good project with the kids???? It is actually very easy. You can get a book out of the library on how to do it, or google it. Lots of fun.

Combine ingredients, chill, and serve. Serves 2.
Slice cucumbers, place in bowl. Cover with weak dilution of water, vinegar, and salt (dill seed and garlic if choose). Cover bowl and refrigerate. They are ready to compliment your next meal! These are not meant to be very tart or salty, but just enough to keep them crispy and give them a refreshing tang. As cucumber slices disappear, slice more into brine. Note: No need to peel these cucumbers, just wash off any sand and enjoy, the skin is thin and tender!
